The Regional Ministry of Agriculture, Fisheries and Natural Environment today presented the book Unes Illes d’arrossos during the third day of the Horeca fair, held at the facilities of the Illes Balears Velodrome. The publication is a compilation of thirty-one recipes, each of them elaborated by cooks from the Balearic Islands, which are based on bombeta rice and combine different local and seasonal products.

The main objective is that through the native variety of bombeta rice, all the possibilities offered by local products, both from agriculture and livestock or fishing, are known. This way, the importance of consuming local products is emphasized and, at the same time, support is given to the producers of the Islands, favoring the progress of the agricultural and fishing sector of the Balearic Islands.
The general director of Agrifood Quality and Local Product, Joan Llabrés, who attended the presentation, stressed that “this book is another tool to publicize the quality of our products and the versatility they offer when preparing recipes. Each one of them brings us closer to our gastronomic culture”. Llabrés also thanked the task and the predisposition of all the cooks who have given their recipes free of charge. The publication is the brainchild of chef Koldo Royo and Roger Gotarredona, from Tándem Comunicación.
In addition, at the stand of the Directorate General of Agrifood Quality and Local Product present at the fair, in collaboration with the Ministry of Education and the School of Hospitality of the Balearic Islands, the students of FP Cooking IES Guillem Colom Casasnoves of Sóller, IES Calvià and the School of Hospitality of the Balearic Islands have developed three of the recipes that are in the book, all under the coordination of the Association of Cooks Based in the Balearic Islands (ASCAIB).
